Chicken
- Teriyaki Chicken
- Dijon-Baked Chicken
- Pecan-Crusted Chicken Tenders and Salad with tangy maple dressing
- Cheesy Rice-Stuffed Chicken Breasts
- Easy Chicken-Mushroom Quesadillas
- Foil-Pack Chicken & Mushroom Dinner
- Crunchy Parmesan Chicken Tenders
Soup
- Creamy Corn Chowder – LOVE it! Need to let it sit for a while so the liquid thickens up. Even better as leftovers.
- Chicken Provencal “Stoup” (a favorite of everyone I’ve passed it along to)
- Homemade Chicken Noodle Soup
Seafood
- Blackened Tilapia Sandwich
- Spicy Garlic Rosemary Shrimp
- Fish Cakes (I’ve only made it with tuna.)
- Mediterranean Tuna Wrap – I like this twist on a traditional tuna salad.
Snacks & Sides
- Nutty Granola – a very good snack
- Honey-Roasted Sweet Potatoes
- Crunchy Fried Tomatoes With Fresh Tomato Salsa – fried tomatoes are good fresh…not so much warmed up later.
- Tuscan Mushrooms
- Oven-Baked French Fries
Desserts
- Dark Chocolate Truffles – the first reactions from 2 people: “Mmmmmm, so sinful!” I guess that means it’s really good?
- Cream Cheese Tarts – Oh, my word, these are freaking amazing! They’re just mini-cheesecakes and take no time at all to make. I used cherry pie filling for the topping.
- Mexican Caramel Sundaes – adding a little hot fudge and a cherry on top makes it even better.
- Decadent Triple-Layer Mud Pie
- Jenny’s Brownie Sundae Pizza
Breakfast
Good stuff that didn’t fit into a current category
- Spring-Summer Ziti
- Sirloin Burgers with Balsamic Mayo, Mushrooms, & Swiss
- Mushroom, Onion, & Basil Pizza – Super fabulous. It tasted like a pizza I would order at a restaurant. Little Caesar’s is poop compared to this pizza!
- Asian Turkey Wrap
- Panini With Proscuitto, Red Pepper, & Mozz. Cheese
