Recent Recipes

A little bit of yumminess I recommend:

Creamy Corn Chowder – LOVE it! Need to let it sit for a while so the liquid thickens up. Even better as leftovers.

tuscan_mushroomsTuscan Mushrooms – Over the past few years, I make stuffed mushrooms for my family to eat. I tried these this year, and they were very pretty and tasty.

Sirloin Burgers with Balsamic Mayo, Mushrooms and Swiss – If you love mushrooms and burgers, you will love this.

Sweet Bacon Chicken Wraps – I made these appetizers for a Christmas party, and they were demloished. The bacon wasn’t as crispy as I expected, so next time I will cook the bacon a little beforehand.

A Holly, Jolly Christmas

This past week has been full of fun and relaxation.

I spent some time on the 23rd wrapping presents, only for them to be demolished less than 24 hours later. I love wrapping presents. I think it’s part of my genetics, as my mom has always enjoyed making each package beautiful. I wish I had taken a picture of the tree with the pieces of art underneath. I’ll add it to my 2009 goals list.

Christmas Eve was spent with both sides of the family. Most of the day was spent with my mom’s side. I loved playing with my cousins Abi and Bre for a good part of the afternoon and eating a ton of special holiday goodies. Abi helped me pass out all the presents. She is 3 years old, so it was the first Christmas where she was 100% into opening everyone’s presents. Here are some pictures of us together:

That night we headed to my grandmother’s house for the Rucker gathering. There were 6 kids 8 years old and younger – complete madness, but a yearly tradition nonetheless. Our group was slightly smaller this year, as 2 families were away from Middle Tennessee. I wish I had taken more pictures that night, but I didn’t, so I don’t have any fun ones to post.

Christmas Day was spent lounging around my parents’ house after a yummy homemade breakfast. Then we gathered with my dad’s fam again for a dinner before I headed to Huntsville to see Andy. After opening presents, we settled down for our last Christmas movie of the season, It’s A Wonderful Life.

I got some great gifts that I will put to good use in the coming months – a baking stone, Origins stuff, serving dishes, lotion, running shirt and socks, books, pj pants, gift cards, and cash. I am thankful for it all!

Over the weekend, Andy and I hung out with a couple of his friends, redeemed some gift cards, read a lot, took a little road trip to Tuscaloosa, ate some famous Dreamland BBQ, shopped some more, and had dinner with his parents.

Once again, it was a great week, and I know this week will be too! Even though I am working until 4pm on Tuesday, this week is filled with my birthday (Tuesday), New Years celebration stuff, setting goals for the coming year, bowl games, road trips, and seeing some old college friends. Lampo Christmas Party ‘08

On Saturday night, Andy and I attended the yearly Dave Ramsey company Christmas party. Yes, we still had a HUGE party despite the overall economic ridiculousness that’s going on. As Dave said, “There’s a recession, but we are choosing not to participate.” HOLLA!

Thankfully, this year there wasn’t insane traffic, so we all got to the party at the Hilton in plenty of time to take pictures and eat mystery (but yummy) appetizers. Andy got to meet some of my favorite work buddies, who thankfully didn’t bombard him with a million questions all evening. ;)

The dinner was fantastic, entertainment was hilarious, and gifts were such a blessing. I am so thankful to work with people who know there is a limitless amount of joy in giving and celebrating.

This and That for 12.19.08

It’s been raining ALL WEEK here in Franklin. Today it momentairly stopped and the sun has come out. It’s so warm that I don’t need a coat and I cracked the windows at my apartment. Nashville-area weather never ceases to amaze us all. (I’m sure you really wanted a recap of the weather.)

The French Lemons had a Christmas party earlier this week. We ended the girlie evening with a white elephant gift exchange. I ended up with an old Garth Brooks CD holder with no CD. It was the absolute worst present ever.

This week I received exceptional customer service from the owner of my local Which Wich store. I emailed him to say that last week when I went in the store, I waited for a few minutes for someone to take my order; however, no employees were in sight. I was shocked because I have always received prompt and friendly service at the store. I wanted to let the team know of my experience so that it doesn’t cost them more money in the future. In response to my email, the owner emailed me back and sent me some coupons for free sandwiches. I am very impressed. I didn’t expect either one. Thank you! I will definitely be returning to good ole Which Wich!

Tomorrow night is the big Dave Ramsey Christmas party. I am 500% excited. I even had a dream about it last night. I dreamt that all 450+ people who will be there were sent on a huge scavenger hunt around Nashville. Just picture a stampede of passionate people running through the Hilton and around the city. Absolute chaos. I am sure this idea should land me a spot on next year’s planning committee.

Tacky Christmas Lights

On Sunday night, instead of going to the Opryland Hotel to look at the massive lights display, we drove around some Brentwood neighborhoods with popcorn and hot chocolate in tow, ooohing and aaahing (and gagging) at the “creative” displays.

Now, before I say any more, let me note my criteria for a tacky Christmas light display:

  • Inflatable yard art
  • Trees that are only half lit
  • Anything that looks like you just gave up midway through the project
  • Trying to wrap trees that have no leaves
  • Horrible neighborhood entrance light display (see all of the above points)
  • Having absolutely no lights at all (everyone passes your house and thinks you’re a Scrooge)
  • Combinations:
    • White and colored lights
    • Flashing and non-flashing lights
    • More than one style of lights (i.e. the big 1970s light with the classic little lights and some kind of new rectangle lights)

In a place like Brentwood, I would assume all Christmas light displays would
be classy and neatly arranged. I could not be more wrong. Someone please tell me why – especially the neighborhood entrances! I have already seen many displays that qualify as recipients of The Tacky Christmas Light Award.

If you have violated any of my Christmas light rules, I still love you, but I cringe at your lights.

Franklin Christmas Festival

On Saturday Andy and I headed to downtown Franklin for the annual Dickens of a Christmas festival. Many people were dressed up like characters from A Christmas Carol – even Scrooge – amidst food and craft booths lining the streets.

A local church’s handbell choir performed (brought back memories, as both of my parents were at one time handbell masters), a teenage choir caroled the songs of the season, and beginning as well as advanced dancers attracted a large crowd as they performed traditional dances from back in the day. Rachael Ray Recap

The Queen of Yummo and Delish made it to Franklin, TN yesterday. Here is my side of the story:

Katie and I got in line at 2:30pm. Our destination was the back of Williams-Sonoma, which is almost to the middle of the mall. After picking up our pre-ordered cookbooks, we got at the back of the line at Macy’s at the north end of the mall. If you’re unfamiliar with the Cool Springs Galleria, just picture a line spanning almost half of the mall.

We waited in line for just under an hour. Pretty good timing, considering the first insane person got there at 6am. (I really hope that person didn’t take off work all day just for 5 seconds of saying hello to Rachael. Give me a break.) The line moved quickly, and I kept myself occupied by looking through the entire cookbook and munching on some goodies the store’s staff gave us – all from the new cookbook (Macadamian nut cheese balls and roasted vegetable pesto dip). We learned that the older lady in front of us with frazzled bleach-blonde hair lives in Green Hills, couldn’t decide who to give the book to for Christmas, and that the free caramel suckers being passed out hurt her teeth – particularly those on the left side of her mouth where she has some crowns. Uh… TMI, lady. TMI.

While in line, I discovered that every staff person at W-S person I encountered was fabulous. The whole event was organized and professional (plus, they gave us free food – brownie points with me), even though I felt like I was in a herd of well-organized cattle.

Well, we finally got in the store, and the line snaked through the overly priced pots and pans on the road to The Rach. We’re almost there:

I thought we’d have at least a cordial exchange of words with her, considering we all just bought her book for more than we could get it on Amazon and waited in line for quite a while. However, she pretty much had her nose in the books signing away and occasionally looking up for a split second. I guess that’s how you roll when you’re famous, on a time crunch, and have been signing books for over 2 hours already. Here is the incredibly awkward picture of me and Rach:

Rachael observations: The woman is really short. Her hair is amazing. She doesn’t look 40. She seemed tired and stressed. She was not her bubbly TV self. She is a regular person just like the rest of us who was just doing her job.

Before Katie and I were shoved off the scene, we did say a happy “thank you!” which caused Rachael to look up, smile, and say “you’re welcome.” Well, that’s a step toward our friendship, don’t you think? Maybe the simple “thank you” set us apart from the other fans.

It was a fun experience, and I’m sure I’ll cook many wonderful dishes from the book. Maybe you’ll be the next taste tester!

After all that, I found out that one of my old college friends met her at Starbucks earlier in the day. Ahhh!

Monday’s This and That

A little something for everyone…

I watched 3 more Christmas movies over the weekend – cartoon version of The Grinch, the original A Christmas Carol and the new Four Christmases. The latter was a cute movie but not one I think will become a Christmas classic. That now bumps my total up to 7.5 Christmas-themed movies or shows on my list to watch this season.

I am so glad my Christmas shopping is done and most of the presents are wrapped.

I am once again into Christmas music this year. Some years (like now) I like it more than in years past. We have a radio station here that plays nothing but Christmas music during the month leading up to Dec. 25; it’s a hit and miss for good songs though.

I hope the weather will be nice this weekend because I’m planning on going to downtown Franklin’s Dickens of a Christmas festival. There will be about 200 people dressed up like characters from the movie or people from the time period walking around the picturesque town and reenacting scenes from the movie. I am looking forward to the food booths (BBQ, please) and tracking down Keith and Nicole.

Speaking of Nashville’s beloved couple, this weekend I had a dream that they were my neighbors. They were living in an apartment across from me while their house was being built. They even invited me in and I ooohed and ahhhed over their daughter, Sunday. It seemed so real! Then I woke up. Boo.

I wonder how many Facebook applications there are. They are completely useless. I never accept them.

I had some new-to-me BBQ this weekend at Jim & Nick’s. Let me tell you – their BBQ quesadillas were awesome!

Rachael Ray is Comin’ to Town

Little Miss Yummo herself is going to be right across the street from my office next week, and I will be there to meet her!

0307383199She’s doing a book signing at our local Williams-Sonoma next Tuesday afternoon. My friend Katie Kate is coming with me and hopefully we’ll be able to get our pictures taken with her. I hope she’s just as hyper in person and that she’ll fall in love with us and want us to become her sidekicks. Yes, that would be fun. Here’s to wishful thinking.

I am no longer a Rachael Ray freak, but I have made a lot of food based on her recipes and really loved her before big marketing teams got a hold of her and plastered her face and hyperness on everything under the sun. (But hey, I’m on a marketing team, so I can’t complain.)

Hopefully I can post next Tuesday with a good report of my first book signing experience and Rachael Ray encounter.
